Strawberry-Spinach Salad with Lemon Dressing
1 cup slivered almonds
Sugar
1 bag (10 ounces) spinach
1 1/2 apples, peeled and diced
1 cup dried cranberries
2 cups sliced strawberries
Dressing
2 tablespoons lemon zest
2 tablespoons lemon juice
1/4 cup oil
1/3 cup sugar
1 teaspoon mustard seed or dry mustard (optional)
Preheat oven to 350 degrees. Candy the almonds by wetting and then rolling in sugar. Bake 10 minutes; cool completely.
In a bowl, toss together all the salad ingredients. In a separate bowl, combine the dressing ingredients. Pour dressing over salad just before serving and toss. Makes 8 servings.
